Picked cherries are placed in a dehydrator with all of the layers intact. The skin is cracked off the bean at the last possible moment, which allows the transfer of intense flavors from the cherry to the bean.
Please see our Brew Guide.
We recommend storing coffee in a cool, dry place. Away from heat and light, and in its original packaging or in an airtight container.
We do not recommend storing in the refrigerator or freezer, as the levels of moisture present can accelerate flavor loss.
Manawai started as an aquaponics system that a small group of friends created on a farm on Maui. “Mana” meaning a supernatural power, and “wai” meaning fresh water.
We later realized the most bountiful offering of the land we are on, was hundreds of naturally growing Red Bourbon coffee trees. These trees grow next to a nutrient rich stream, under a tropical grove of fruit trees.
Our coffee is sustainable, as the cherries are picked at a rate that allows the trees to naturally regrow the fruit. We are deeply committed to remaining in harmony with nature and the glorious island of Maui.
Also, our luxurious processing methods do not make use of caged animals, and our small team of workers are paid a fair wage.
Our coffee is not certified organic, however it is wildcrafted and grows naturally. The coffee trees grow entirely without the use of pesticides, synthetic fertilizers or chemicals of any kind.
Because all of our roasts are Limited Editions, each batch is prepared during different times of the season.
